Skillet Chicken Almondine
This quick skillet dinner combines leftover chicken with rice and green beans – flavors the whole family loves, all in one dish. Sprinkle with almonds for a nice crunch.

Skillet Chicken Almondine

Ingredients
1/2 cup (2 oz.) Whole Almonds, coarsely chopped
1 tbs Vegetable Oil
1 1/2 cups Diced Yellow Onion
2 cups Chopped or Pulled Cooked Chicken or Turkey
1 1/2 cups Uncooked Instant White Rice
2 cans (14.5 oz. each) Del Monte® French Style Green Beans, drained
1 cup Water
2 tbs Soy Sauce
1/2 tsp Garlic Powder
Salt, to taste
Pepper, to taste
Directions
- Lightly toast almonds in a large skillet over medium-high heat, 3 to 5 minutes, stirring constantly, until lightly browned and fragrant.
- Remove from skillet and set aside. In the same skillet, heat oil over medium-high heat; add onion and cook 5 minutes until softened.
- Add chicken, rice, green beans, water, soy sauce and garlic powder; stir gently until combined. Bring to a boil; reduce heat to medium-low.
- Cover and simmer 10 to 12 minutes or until rice is tender and liquid is absorbed.
- Remove from heat.
- Stir and season to taste with salt and pepper.
- Sprinkle with almonds before serving.
TIP: Try other simple ways to add a special touch before serving other than almonds, such as chopped fresh tomato, shredded or grated cheese, chopped fresh parsley or sliced green onions.
